This cheese soufle is one of a range of dishes on the menu at the Punchbowl Inn at Crossthwaite in teh Lake district. The pub is one of Britains top ”gastro” pubs. It is certainly a far cry from the cold pie on a bar that grew up with.
This shoot took place during service on a table in the bar area so that we did not interfere with the running of the pub. The skill with this dish is speed. As with all our food shoots the food is fully preapred and we do not use “fakery” as I believe you can tell the difference. I love the pressure of having to work quickly and good results are achieved by communication and planning with the kitchen.
